Greens That Taste So Good!

Let’s be honest… It can be so hard to learn to love greens, want to eat your vegetables (even as an adult), or feel stuck in the same old boring rut. I’ve been ketogenic for six years now, so my diet is packed with veggies. Over time, I’ve learned to get creative and make eating healthy (for me) feel energizing and rewarding. Having worked in fine dining for over a decade, I became a true foodie and developed an appreciation for scratch cooking and whole ingredients—but, IT HAS TO TASTE GOOD DAMN IT!

Staying consistent and feeling healthy is all about having options that feel fun, fresh, and satisfying—foods that make you feel like you're not missing out on anything. As a mom, I can’t tell you how many times I see my little ones enjoying foods and snacks I’ve sworn off (moms, you know what I mean), and I feel just a little jealous. But when I keep things interesting, fresh, and crave-worthy, I don’t feel like I’m missing a thing! Over the years, I’ve created, mixed, and drawn inspiration from amazing restaurant recipes I was exposed to during my hospitality years and from home-cooked meals. I’ve compiled them into a collection that keeps me on track, feeds cravings, and helps me feel amazing. But no matter what, I know myself. Understanding why I’m eating something healthy, what its benefits are, and creating something elevated helps me feel a little fancy, a little bougie, and in control.

  • Prep time: 15-20 minutes

    Total time: 20-25 minutes (including toasting almonds)

    Ingredients:

    • ½ cup Extra-Virgin Olive Oil

    • ¼ cup Freshly Squeezed Lemon Juice

    • 3 Garlic Cloves, mashed

    • ½ tsp Salt

    • Pinch Red Pepper Flakes

    • 2 Bunches Lacinato Kale (about 14 ounces), ribs removed and leaves sliced into 1/4-inch shreds

    • ½ cup Finely Grated Grana Padano or Parmigiano-Reggiano cheese, grated on a Microplane

    • 2 tbsp Toasted Almonds (instead of bread crumbs, lightly toasted and chopped)

    • Garnish: Grana Padano or Parmigiano-Reggiano Cheese Shavings

    Instructions:

    1. Prepare the Dressing:
      In a small bowl, whisk together the olive oil, freshly squeezed lemon juice, mashed garlic cloves, salt, and red pepper flakes until well combined.

    2. Toast the Almonds:
      In a dry skillet over medium heat, toast the almonds until golden and fragrant. Once cooled, chop them coarsely and set aside.

    3. Prepare the Kale:
      Remove the ribs from the kale and slice the leaves into 1/4-inch shreds. Place the kale into a large mixing bowl.

    4. Assemble the Salad:
      Drizzle the dressing over the kale and toss to coat the leaves thoroughly. Massage the dressing into the kale for a couple of minutes to soften the leaves.

    5. Add Cheese and Almonds:
      Stir in the grated Grana Padano or Parmigiano-Reggiano cheese and toasted almonds.

    6. Garnish and Serve:
      Top with more cheese shavings for garnish and serve immediately.

  • Prep time: 10-15 minutes

    Total time: 10-15 minutes (just chopping and mixing)

    Ingredients:

    • 3 cups Cubed Avocado

    • ¼ cup Olive Oil

    • 3 tablespoons Lime Juice

    • 2 tablespoons Lemon Juice

    • 6 Cloves Garlic, crushed

    • 1 teaspoon Kosher Salt

    • ¼ teaspoon Ground Black Pepper

    • ¼ cup Diced Feta Cheese

    Instructions:

    1. Prepare the Dressing:
      In a small bowl, whisk together the olive oil, lime juice, lemon juice, crushed garlic, kosher salt, and ground black pepper until well combined.

    2. Prepare the Avocado:
      Cube the avocado into bite-sized pieces and place them into a large mixing bowl.

    3. Add Feta:
      Gently fold in the diced feta cheese with the avocado.

    4. Toss with Dressing:
      Drizzle the prepared dressing over the avocado and feta mixture. Toss gently to coat, being careful not to mash the avocado.

    5. Serve:
      Serve immediately and enjoy!

  • Prep time: 5-10 minutes

    Total time: 5-10 minutes (quick and easy assembly!)

    Ingredients:

    • 12 Cucumber Slices

    • ½ cup Whipped Cream Cheese

    • 2 tablespoons Plain Greek Yogurt

    • 1 tablespoon Everything Bagel Seasoning

    Instructions:

    1. Prepare the Cream Cheese Mixture:
      In a small bowl, combine the whipped cream cheese and plain Greek yogurt. Mix until smooth and well combined.

    2. Assemble the Bites:
      Place the cucumber slices on a serving plate. Spread a generous layer of the cream cheese mixture on top of each cucumber slice.

    3. Season:
      Sprinkle the Everything Bagel Seasoning over the cream cheese mixture on each cucumber slice.

    4. Serve:
      Serve immediately and enjoy these fresh, flavorful bites!
